Absinthe is a distilled, highly alcoholic anise-flavored spirit derived from herbs and the fundamental ingredient: grand wormwood (Artemisia absinthium). It was popular in the late 19th and early 20th century, especially in France, particularly among Parisian artists and writers such as Van Gogh and Lautrec. It is typically green in colour, turning to a cloudy, opalescent milky green (know as the louche) when mixed with water and is historically referred to as ‘The Green Fairy’.

Absinth La Fee Parisian

La Fee Absinthe is made in Paris in the 19th century and was developed in a French distillery under the supervision of Madame Delahaye. It contains a dozen or more plants, including 'Grande' and 'Petite' Absinthe (artemisia absinthium and artemisia pontica). La Fee Absinthe was awarded a Silver Medal in the International Spirits Challenge 2003. It has a dark green colour, rich bouquet of aniseed flavour and louches (turns cloudy with the addition of water) beautifully.absinthe.

In "Pays de Forcalquier", located in Haute Provence, a region in the South of France, Distilleries et Domaines de Provence have been making aperitifs and liqueurs from Provence for over one hundred years. Les Distilleries et Domaines de Provence, founded in 1898, have inherited a tradition that is several thousand years old : harvesting medicinal herbs from Montagne de Lure, famous for its rich and abundant plant spices. The specialty products they made from the plants of Lure are in many cases drinks or beverages that have depurative, tonic, digestive, or refreshing qualities, or they may stimulate the appetite. Wine and alcohol, maceration and distillation are methods used to extract the aromas and active ingredients from the plants and to preserve them. Rich in aroma and flavour, Henri Bardouin is recognised in France as the ultimate Pastis to be enjoyed with water as an aperitif. The intense, rich flavour requires only one part Pastis to six parts water.

Pernod Pastis

Pernod Pastis

This aniseed aperitif was invented in France as a relacement for the banned absinthe, and quickly became a massive successs in its own right. Pastis is normally diluted with water before drinking. Generally five volumes of water for one volume of pastis, but often raw pastis is served together with a jug of water for the drinker to blend together according to preference. The resulting decrease in alcohol percentage causes some of the constituents to become insoluble, which changes the liquour's appearance from dark transparent yellow to milky soft yellow.
