Calvados, brandy produced from apples or a blend of apples and pears from a strictly controlled area of Normandy, distilled and aged in oak barrels for a minimum of two years.

The Calvados region has three AOC’s – Calvados, Calvados Pays D’Auge and Calvados Domfrontais, the Pays D’Auge AOC stipulates that the cider must be distilled twice, enhancing its quality.

Calvados may be labelled with age designations – Fine/3 star - minimum age of 2 years, Reserve – minimum age 3 years, Vieille Reserve/VSOP – minimum age 4 years, Hors D’Age – minimum age 6 years, Extra/XO/Napoleon- minimum 6 years.

Domaine Dupont Calvados Hors D'Age

Located in the very heart of the Pays d’Auge in Normandy, the Domaine Familial Louis DUPONT is today run by Etienne Dupont and his son, Jérôme, 3rd and 4th generations, respectively. Since taking over in 1980, Etienne has improved the old orchards and following the traditional methods of producing Calvados, the apples are hand-picked and rest in open wooden boxes called pallox to reach their highest aromatic peak. The juice is slowly extracted under low pressure and kept on its lees for 2 months to prevent any alteration of the cider’s flavor. The apple cider then undergoes a double distillation through a sophisticated Chalvignac copper still. . The nose takes all its complexity after oxygenation, slightly oaked. Taste: Smooth and balanced, with a good persistence. Very retro-nasal. It's a good compromise between the freshness of fruits and the concentration of old eau de vie.

Dupont Calvados VSOP Aoc Pays D'Auge

Calvados is distilled from specially grown and selected apples, of which there are over 200 named varieties. It is not uncommon for a Calvados producer to use over 100 specific varieties of apple to produce their Calvados The fruit is picked (usually by hand) and pressed into a juice that is fermented into a dry cider. It is then distilled into eau de vie. After two years aging in oak casks, it can be sold as Calvados. AOC Calvados Pays d'Auge is the most highly controlled and best quality of the Calvados appellations. Here, apples from the Pays d'Auge are distilled in a copper double still and must be fermented for a minimum of six weeks
