Single Malt Whisky – 100% malted barley whisky from one particular distillery. Single Malt whiskies are categorised into regions: Highland malts which also includes the regions of Speyside and the Islands; Lowland Malts; Islay Malts and; Campbeltown in the Mull of Kintyre.

Malt Whisky is bottled normally at 40% abv or just above yet some distillers and bottlers offer cask strength expressions, bottled undiluted from the whisky cask. Malt whisky at cask strength should be cut (diluted) before drinking.

This is a 12 year old single malt which gains its distinctive character from being matured in two woods. Limited Release Caol Ila Distillers Edition

Caol Ila (pronounced 'cull-eela'), is considered to be one of the lighter of the Islays. Medium-bodied with a rounded flavour. Pale in colour with a greenish tinge. This malt has a peaty nose, with distinct floral notes. It is described as tasting slighty of seaweed/iodine, lightly medicinal, smoky, salty, sweet with a dry peppery finish. Caol Ila is hidden in a quiet cove near Port Askaig. Many consider this locality to be the wildest and most picturesque of the island. Situated on Loch Nam Ban, the site is ideal thanks to the abundant supply of good water. Caol Ila (Gaelic for 'the Sound of Islay') was built in 1846 by Hector Henderson - a Glasgow businessman with a keen interest in distilling.

Clynelish single Highland malt is yellow gold in appearance, with a sweet, floral, slightly waxy nose, and maritime hints on the palate. The finish is dryish, with a slightly salty aftertaste. Aged in oak casks for 14 years. Clynelish is situated on the north-east coast of Scotland, between Inverness and Wick and takes its name from the Gaelic for cultivated land – or farm. It was founded in 1819, on a farm, by the then future Duke of Sutherland. The barley is still malted in the northern Highlands, while the water continues to be piped down from the Clynemilton Burn to the distiller.

The distillery was founded between 1825 and 1833 by the brothers George and John Rate, it was originally named Milton Distillery. Matured in American oak bourbon casks with some finishing in Amontillado sherry butts for the distillers edition. Glenmorangie has existed as a distillery since 1843 when William Matheson bought a license to make whisky on the site of a brewery located near the Tarlogie Springs in Ross-shire in the highlands of Scotland. A remarkable malt, antique gold in colour: golden but with a rosy hue. This whisky has been matured for at least 12 years in American white oak casks and racked for several years into Ruby Port pipes for 'finishing'. Add a drop of water and the aromas you get predominate with butterscotch and dark chocolate. But there are also fresh minty notes and a certain dryness a bit like lint.

Monkey Shoulder uses only malt Scotch whisky from three of Speyside's finest distilleries. This triple malt makes it ideal for mixing as well as drinking in the more traditional way. Monkey Shoulder is inspired by and named in honour of the malt men at William Grant, who are among the few still to turn the malting barley by hand using a sheil (wooden shovel). Monkey Shoulder was a nickname that was given to a temporary injury some malt men occasionaly suffered many years ago as a result of repeatedly bending over whilst turning the malt. Crafted in small batches of just 27 casks, Monkey Shoulder's smooth and rounded taste has accents of malty sweetness, vanilla, marmalade and barley sugar. This whisky has a distinctive design on the bottle's shoulder showing three brass monkeys, each representing one of the constituent single malts.

The Oban distillery was founded in 1794 by three brothers, Hugh, John and James Stevenson. The Stevenson family also founded the town of Oban. In 1883, the distillery was acquired by Walter Higgin. In 1898 the distillery was taken over by Oban & Aultmore-Glenlivet Ltd. Partly germinated barley is gently dried in a kiln where a light peat smoke gives the malt a distinctive character and taste. The result is the smoky, malty dryness in the favour and finish of this whisky. Quite malty and sweet opening, with a medium body and a generous dry finish with a hint of spiciness.

This vatted malt was originally created by Compass Box for a New York customer who wanted a big, smoky, rich whisky.
